Ingredients:
Waffle Batter:
Eggs – 2
Egg white – 1
Greek yogurt – 150 g
Cottage cheese – 100 g
Oat flour – 170 g
Protein powder (whey or neutral) – 40 g
Baking powder – 10 g
Fine sea salt – 4 g
Sugar – 10 g
Instructions:
To Make the Waffles:
Gather your required ingredients.


If the cottage cheese has a grainy texture, blend it until smooth.
In a bowl, whisk together eggs, egg white, Greek yogurt, and cottage cheese until fully combined.
In a separate bowl, mix oat flour, protein powder, baking powder, salt, and sugar.
Add the dry ingredients to the wet mixture and mix until a smooth, thick batter forms.
Preheat the waffle iron and lightly grease it if needed.
Pour the batter into the waffle iron and cook until golden and fully set.
Repeat with the remaining batter to make 6 waffles.

I really enjoy your recipes. Although I tried the tortilla recipe and it appears that the gram vs the cup measurements are off. I usually do grams . It called for 120 grams of chickpea flour or 1/2 cup. But 120 grams converts to 1 cup of flour. The 120 grams made for a very thick batter that I had to discard. I remade them with the cups conversion and it worked out great!
It sounds yummy. But what does the protein powder give to it, abd what could I sub in for a less processed addition?
