Did you know that we’ve eaten bread for over 5000 years?...
But we’ve only eaten industrial bread (unfermented, mass produced bread) since the 1960’s.
What changed?
We used to eat real butter, real bread, real whole food.
Now it’s fake butter, fake bread and fake processed food.
And we’re sicker than ever!
We’re eating fake bread, REAL bread is fermented.
The ancient Egyptians discovered that mixing flour and water together and leaving it to sit for several days would cause wild yeasts to start fermenting, resulting in a risen dough.
So for thousands of years bread was made by fermentation.
We had diseases, but chronic diseases (like obesity, diabetes and cancer) were very rare.
(Even though most people ate bread everyday).
But in the 1960’s, mass produced unfermented bread entered the market (because it was cheap to produce).
So the problems began…
And in the 1970’s scientists started seeing gluten sensitivity!
In the 1950’s scientists discovered celiac disease, but by 1970 gluten sensitivities were popping up everywhere.
Why?
Because we’d stopped fermenting bread & using ancient grains (which had a very tiny amount of gluten).
Bread instead was being made with pesticide ridden, GMO wheat (where the wheat grain is genetically altered so it can be farmed at scale).
But our stomachs? They didn’t adapt to GMO wheat, so people got sick.
In the last 30 years the numbers have gone crazy.
Our grandparents’ bread was fermented and low in gluten.
Our ancestors’ bread was fermented for days and had 0 gluten.
But bread now?
Bread has gone.
What’s left is a processed bake that resembles bread. (Even sourdough at the store uses problematic GMO wheat now).
This processed bread is behind a lot of modern health issues.
Traditional gluten-free sourdough is the opposite (It’s a superfood).
