• Water kefir grains • Water
Instructions:
1. Prepare a batch of water kefir as usual.
2. Keep your first ferment at room temperature for 72 hours. After that, remove the grains, but leave the cultured kefir on the counter to ferment an extra 5 days or so.
3. Taste it from time to time to determine doneness.
4. Once the vinegar tastes right, pour it into a small jar and keep refrigerated.
