Here’s a little story I enjoy sharing.

Back in the 1800s, British bakers created digestive biscuits using whole wheat flour.

The idea was simple - make a biscuit that felt light on the stomach while still tasting good. People quickly fell in love with them, especially during afternoon tea.

Now fast forward to modern kitchens. Bakers began adding bran, oats, and other fiber-rich grains, transforming the traditional biscuit into what we now enjoy as High-Fiber Digestive Style Biscuits. Same comforting idea-just a healthier twist.

Ingredients:

Dry Ingredients:

• Gluten-free oat flour – 80 g

• Quinoa Flour – 50g

• Almond flour – 60 g

• Psyllium husk – 30 g

• Inulin – 25 g

• Coconut sugar – 40 g

• Salt – 4 g

• Baking powder – 5 g

Wet Ingredients:

• Cold butter – 80 g (cubed)

• Cold milk – 60 g

• Vanilla extract – 5 g

Instructions:

1. Gather your required ingredients.

2. In a large bowl, combine oat flour, quinoa flour, almond flour, psyllium, inulin, coconut sugar, salt, and baking powder.

3. Add cold cubed butter.

4. Rub the butter into the dry ingredients using your fingertips until the mixture becomes sandy and grainy. It should resemble coarse crumbs.

5. Add cold milk and vanilla.

6. Mix quickly just until the dough comes together. Do not overwork.

7. Place the dough between two sheets of parchment paper and roll to approximately 4–5 mm thickness.

8. Cut circles using a cookie cutter.

9. Transfer to a lined baking tray.

10. Prick the surface with a fork to create the classic digestive pattern.

11. Bake at 170°C / 340°F for 15–18 minutes until lightly golden around the edges.

12. Cool completely before serving - they firm up as they cool.
