Eggs – 2
Oat flour – 90 g
Salt – 2 g
Agave syrup – 5 mL
Plant-based milk (or regular milk) – 270 g
Psyllium husk – 5 g
Water – 30 g
Chia seeds – 15 g
Olive oil – for cooking
Instructions:
To Prepare the Batter



Gather the necessary ingredients.
In a bowl, whisk together eggs, milk, water, and agave syrup.
Add oat flour, chia seeds, psyllium husk, and salt.
Mix until fully combined and smooth.
Let the batter rest for 5–10 minutes to hydrate and thicken.
Stir the batter again before cooking to redistribute chia and psyllium evenly.
To Cook the Crepes


Heat a non-stick pan over medium-high heat.
Lightly grease with olive oil and remove excess with a paper towel.
Pour a portion of batter into the pan and spread thinly using a spatula or by rotating the pan.
Cook for about 2 minutes until set.
Flip and cook for another 1–2 minutes.
Repeat, stirring the batter before each crepe to maintain consistency.
