The cool, almost icy freshness of mint, the rich, slightly bitter chocolate, and that smooth creamy texture - it all comes together in a way that feels both nostalgic and new.

Cook Time: 10 minutes
Chill Time: 4–6 hours
Churn Time: 20–30 minutes
Servings: Approx. 4–5 portions
Ingredients:
Milk – 300 g
Egg yolks – 2
Agave syrup – 40 g
Greek yogurt – 150 g
Protein powder – 30 g
Dark chocolate (chopped) – 40 g
Fresh mint – approx. 15 leaves (chopped)
Instructions:
1. To Prepare the Custard Base:
Gather the necessary ingredients.
In a saucepan, combine milk, egg yolks, and agave syrup.
Heat gently while stirring constantly.
Cook until the mixture reaches approx. 70°C / 160°F.
Do not boil — keep it smooth and slightly thickened.
2. To Cool:
Remove from heat and cool completely to room temperature.
3. To Finish the Base:
Add yogurt and protein powder to the cooled mixture.
Blend or whisk until fully smooth and homogeneous.


4. To Churn:
Transfer the mixture into an ice cream machine.
Churn for 20–30 minutes until creamy.
5. To Add Inclusions:
In the last 2–3 minutes of churning, add chopped chocolate and fresh mint.
6. To Freeze:
Transfer to a container and freeze for 2–3 hours until scoopable.
Scoop it up, top with fresh mint, and enjoy every creamy, refreshing bite.
Storage:
Store in the freezer for up to 2 weeks. Let sit at room temperature for 5–10 minutes before serving for best texture.
