Some even believe their iconic shell shape was inspired by pilgrims’ scallop shells, carrying a quiet story of travel and tradition.
Now let me bring you into my kitchen for a moment. I’ve taken that timeless charm and given it a gentle, modern lift.
These High-Fiber Poppy Seed Raspberry Madeleines carry the same golden, buttery aroma, but with a lighter, more wholesome touch.
The poppy seeds add a delicate nutty texture, while raspberries melt into bright, tangy bursts in every bite.
And yes, the added fiber makes them feel more balanced - something your body appreciates just as much as your taste buds.

Prep Time: 15 minutes
Rest Time: 10 minutes
Bake Time: 12–15 minutes
Oven Temperature: 180°C/350°F
Servings: Approx. 20 madeleines
Ingredients:
Oat flour – 70 g
Almond flour – 50 g
Poppy seeds – 20 g
Psyllium husk – 10 g
Baking powder – 5 g
Salt – 1 g
Milk – 60 g
Olive oil – 90 g
Honey (or agave syrup) – 65 g
Eggs – 2
Fresh raspberries – 180 g
Freeze-dried raspberries – optional, for decoration
Instructions:
1. To Prepare the Psyllium Gel:
Gather your required ingredients.
In a bowl, combine psyllium husk, milk, and olive oil.
Mix well and let sit for a few minutes until a thick gel forms.
2. To Prepare Dry Ingredients:
In a separate bowl, combine oat flour, almond flour, baking powder, and salt.
3. To Whip the Eggs:
In another bowl, whisk eggs with honey (or agave) until very light, airy, and foamy.



4. To Combine:
Add dry ingredients and poppy seeds to the whipped eggs.
Add the psyllium gel.
Gently mix everything together with a whisk until smooth and fully combined.
Let the batter rest for 10 minutes to hydrate and stabilize.
5. To Assemble:
Preheat the oven to 180°C/350°F.
Transfer the batter into a piping bag.
Pipe into madeleine molds, filling about 70% of each cavity.
Place one fresh raspberry into the center of each madeleine.
6. To Bake:
Bake for approximately 15 minutes until lightly golden and set.
Rotate the tray if needed for even baking.
Remove from molds and let cool slightly.
7. To Finish:
Sprinkle with crushed freeze-dried raspberries.
Storage:
Store in an airtight container at room temperature for up to 2 days or refrigerated for up to 4 days. Best enjoyed fresh.
