It’s a bit faster to make, as you can make a new batch in 2-3 days. Kombucha typically takes a bit longer. Also, water kefir contains no caffeine, which makes it better to drink later in the day or evenings compared to kombucha, which includes black tea. You should give it a try, it’s easy to make. I’ve been using the same water kefir grains for 18 months!
That’s such a great idea! 🙌 There’s nothing like fresh, healthy refreshments, especially in this weather! Can’t wait to hear what flavor combos you try, let us know how it goes!🥂
Instructions: For the syrup, combine the water, sugar, and lavender blossoms in a small saucepan over medium-high heat. Stir until the sugar is fully dissolved and the mixture starts to boil.
Reduce the heat to low and let the mixture simmer for 5 minutes. Turn off the heat and let the contents steep for an additional 30 minutes.
Allow the syrup to cool to room temperature. Pour into a clean glass jar through a mesh strainer to remove the blossoms. Set aside.
Using a fork, crush the blackberries to release more of their flavor.
Mix the berries, water kefir, warm honey, plus 60ml of the lavender syrup. Transfer the mixture to a glass bottle.
Seal the bottle and let sit for 24 hours to ferment a second time.
Refrigerate until ready to drink.
*Use the rest of the syrup to make more batches, cocktails, baked goods, or as a sweetener for tea.

These sound amazing! I think it's time for me to get a new batch of tibicos and start making water kefir again.

Never tasted water kefir. It's similar to kombucha?
Am I the only one who read the recipes and noticed the missing ingredients? Please supply the ingredients/ratios for the sugar syrup. Thank you :)
