1/2 teaspoon turmeric
1/4 teaspoon cayenne pepper

2 tablespoons gluten-free soy sauce
2 tablespoons lime juice
1 tablespoon brown sugar
1 teaspoon minced garlic
1/2 teaspoon grated ginger
Water (to thin the sauce)
instructions
In a bowl, whisk together soy sauce, fish sauce, brown sugar, curry powder, turmeric, cayenne pepper, and vegetable oil. Add chicken strips and toss to coat. Marinate for at least 30 minutes.
Preheat grill or grill pan over medium-high heat.
Thread marinated chicken strips onto soaked wooden skewers.
Grill chicken skewers for 4-5 minutes on each side, or until cooked through and slightly charred.
In a small saucepan, combine peanut butter, soy sauce, lime juice, brown sugar, garlic, and ginger. Heat over low heat, stirring constantly, until smooth. If the sauce is too thick, thin it out with water until desired consistency is reached.
Serve chicken satay skewers with peanut sauce on the side.
