These are some of our absolute favorite recipes right now. The kind you make once… and then keep coming back to. Simple, crowd-pleasing, and no one will even notice they’re gluten-free.
1. Gluten-Free Pesto Pull-Apart Dinner Rolls with Zaatar

These fluffy, gluten-free pesto rolls are packed with vibrant basil pesto and gooey cheese, and topped with zaatar and butter.
2. Mushrooms Stuffed with Spinach, Walnuts, and Melted Mozzarella Cheese
Savory, rich, and always the first to disappear. Some melted vegan mozzarella cheese brings these stuffed mushrooms to the next level.
Preheat the oven to 400°F. Lightly oil a large baking pan and set aside. In a large skillet, heat the oil over medium heat. Add the mushroom tops and cook for 2 minutes to soften slightly. Remove from the skillet and set aside.
Chop the mushroom stems finely, and add them to the same skillet. Add the onions and cook over medium heat until softened, about 7 minutes. Add the garlic and cook for an additional minute. Stir in the spinach, walnuts, red pepper flakes, and salt and pepper to taste. Cook for 2 minutes, stirring well to combine.
Fill the reserved mushroom caps with the stuffing mixture and arrange in the baking pan. Top with the vegan mozzarella cheese, and bake until the mushrooms are tender and the filling is hot, about 10-15 minutes. Serve hot.
3. Vegan Chickpea Salad with Fresh Herbs
Try this simple and delicious vegan chickpea salad with fresh herbs! It’s packed with flavor, super easy to throw together, and perfect for a healthy meal. Whether you're looking for a quick lunch or a light dinner, this salad is full of freshness and nutrients - ready in no time!
Rinse and drain one can of cooked chickpeas, and add the rinsed and drained chickpeas to a medium-sized mixing bowl.
Add some Kosher salt, black pepper, red pepper flakes, dried oregano, and cayenne pepper, along with the zest and juice of half of one lime.
Mix in the minced jalapenos and finely-diced red onion.
Fold in the fresh herbs, add a drizzle of olive oil, and mix well until everything is evenly distributed.
Taste, and add more salt, dried spices, fresh herbs, or lime juice, if desired.
4. Gluten-Free Lasagna
This recipe begins with our basic gluten-free pasta dough recipe! At the end of the day, you can add whatever you want in between the layers of pasta.
Roll out the pasta dough into thin sheets either with a rolling pin or a pasta machine.
Oil a 30cm by 15cm baking dish and trim the pasta sheets to the same size.
Heat the oil in a frypan and add onions, garlic, mushrooms, and tomato passata. Simmer for 10 minutes and add Italian herbs and baby spinach until wilted.
Spread ¼ of the mixture across the bottom of the baking dish and top with a pasta sheet. Add another ¼ of the tomato mixture on top and another pasta layer. Repeat until all have been used, finishing with a tomato layer. Top with the vegan cheese.
Bake for 35-40 minutes until golden and bubbling. Allow to cool slightly before cutting and serving.
